I served this during the Sustainable Seafood Week Gala and it was a huge hit. It is simple to prepare and is delicious. The most important thing is to find a quality source of salmon. Hmmm… I know where you can get that.
1 lb. high quality salmon cut into 1/2 cubes
1/2 c. Soy sauce
3/8 c. Chopped scallion
3/8 c. Minced cilantro
1 tbsp. Sesame oil
1/2 tbsp. Toasted sesame seeds
1/2 tbsp. Crushed red pepper
Combine and stir. Allow to marinate in the refrigerator for 10 minutes and serve.
